On my current product we have H1-H4 styles, 3 body styles 18pt, 16pt, 14pt, Eyebrow at 12pt. For the headlines we have a serif and sans serif font defined that are interchangeable based on use. General rule would be to keep it simple, they can always scale later.
It’s a scale… H1-4 are 60px 40px 32px and 24px. For each we have an established serif and sans serif that can be used at those sizes.
This is a bit of a how long is a piece of string question. The jumps between type sizes are part of the way a design communicates character. Without knowing what the design is trying to say (fun, serious, academic, jazzy, etc.) it’s hard to advise.
