Build the portfolio you want and are capable of, not just the portfolio you were paid to do. It's okay if your portfolio is a mix of conceptual and paid projects.
Mine showcases designs and passion projects that I will never get a penny for, and probably will never actually be hired for as a job (mostly because I've moved on from some areas of design in my career), but shows off my personality, style, hobbies, and other skills. I also had to "clean up" most of my paid work too so it looked prettier and more cohesive. For example, using digital mock-ups on 3D products, scenes, and device screens and such. Doing something like that might help you feel more connected with your work, and feel prouder to showcase it.
Also, f* that boss. I hope karma comes for that ableist verbally-abusive a$$hole.
