My jobs is like one of those jobs where the management don’t care that we have life outside of work. My family and I planned to travel in the winter-spring. For my job, we have to put requests in months ahead of time to get off now. What should I do if they don’t approve mine? They like to play favoritism with different people. Any advice?

Get another job that pays you more money and gives more flexibility for time off. Putting in months in advance feels so 1970s.

Yes. This. I'd planned months ahead for medical appointments only to be messed around with 'other strategies' to control my 'outside' life. Get rid. Find another job. Many never have to put up with that sort of behavior.

Just tell them you are taking the time off. Don’t ask. Just tell them.

I mean, I get it. My job has 'busy seasons' half the months of the year, which significantly reduces the options for taking vacations. It's reduced even more now that my kids are going into high school and don't want to miss a week of school. If I were you, I'd suggest getting the time approved before booking something.

I'm entertaining guests and picked up a black summer truffle on a whim, trying to decide what to do with it. I've got some rib eyes and will be making mashed potato as well (among other things).

After sous vide and searing the steaks I was going to cook fresh rosemary and thyme in some butter before spooning them over the steaks while resting to heat them up a bit immediately before serving.
