I personally think a specialist is better. A team of specialists doing what they do best.
But it seems that today companies want to hire generalist so they can overwork one person that’s a jack of all trades to save money.
A jack of all trades is a master of none and the work will reflect that.

I think specialist is likely where you can earn way more but in terms overall job prospects, a generalist will allow for more options. You're right though that companies probably want generalists overall to cut down on costs and overwork them

True. I do think there are perks to both depending on what you're looking for; however, I think it is very possible to get pigeonholed as a specialist which could make things harder for you
