Off season unless the activity such as snowboarding is only available during peak season.
I always do my big trips in the shoulder seasons: Spring/Fall.
It’s worth it to go during offseason anytime it’s possible. I really like going during offseason. You can get around without reservations or a lot of planning ahead. Do you have an upcoming trip you’re interested in?
I think it all depends on what it is you want to do! Peak season is peak for a reason - it's usually the "best" time to visit the area. But if you don't care so much about the main attractions and want to experience the area like a local, off season is fun. Shoulder season is often a sweet spot between the two.
