What’s a healthy cutoff time for responding to work emails once you’re home? I’m trying to set better boundaries even though a leader (three levels above me) is online late into the evening and sends me requests for things that take at least 20-30 minutes to complete.

A healthy cutoff time is when you leave the job at the end of the day. Which is why we call it the end of the day. If someone is sending you things late at night and asking you to work on them for a half hour, that's just wrong. Sounds like some kind of dominance game.

The newer versions of office do allow for scheduling emails to be sent at a different time. I try my best to do that, but a few slip through the cracks.

It would be a healthy conversation to have with your manager first and then check-in with the manager 3 levels up on expectations on when to return emails.
