A healthy cutoff time is when you leave the job at the end of the day. Which is why we call it the end of the day. If someone is sending you things late at night and asking you to work on them for a half hour, that's just wrong. Sounds like some kind of dominance game.
But are they really expecting you to respond right away? Sometimes people send emails in the evening because they like to catch up but aren’t expecting anyone to see or react to them until the next day,
Same. I’m working for me not because I expect replies.

The newer versions of office do allow for scheduling emails to be sent at a different time. I try my best to do that, but a few slip through the cracks.
It would be a healthy conversation to have with your manager first and then check-in with the manager 3 levels up on expectations on when to return emails.
When you leave for the day. Set the expectation with people if you have left they will get a response when you return.
