I applaud your default nature of honesty but you’re in the business of selling.
You know the answer.
Keep it simple and sell yourself.
Just talk about the last cool thing you’ve worked on, imaging it just transpired, even though it hasn’t. That will give you the energy to power through the question and technically you’re telling the truth since you did work on said project, just not on the timeline you mention.
Why do this? Because nobody likes a sob story, so give them what they want and protect your self.

Say the last thing you worked on.
Pitches. “I’ve been helping out a few agencies with their pitches”. No one is going to ask any follow up questions because of NDAs and there’s nothing to show for when you work on a pitch, so… 🤷🏻♂️
It's just small talk, just tell them the latest projects you've been on since that's all it really means.
Say you’ve been working on something you’re really excited about, but it’s not out yet so you’re not supposed to go into detail. Then use that to segue into telling them about a real project that finished whenever-ago.
