I’ve found those classes are only as good as your instructor. Find a teacher who’s work you admire and take whatever they’re teaching.
If you’re already at a great agency. And it is truly great, just concentrate on that for now.

Are you worried about not getting any work produced during the internship? Working on real briefs at an actual agency is invaluable. But I’d also suggest working closely with a trusted mentor at the agency to give you feedback on spec work.

Do it. Find instructors you like, and work hard to impress them. You might find that besides a portfolio, they’re willing to help you get a good job. I always prefer hiring a recommended person, or hiring a jr I’ve worked with. It’s so much easier on me lol.
I did that 20 years ago by accident (I signed up for a class before getting a Jr. writer job). The class was with David Angelo, and it was a lot of work to keep up with both but I don’t regret it.
Agree with @ACD2, concentrate on your internship and make the most of it.
Be proactive and keep presenting as much ideas as you can to your CD or line manager. That might turn into a job offer once your internship is over.
