Best Caribbean island or a place in Central America to visit right now (well, during Thanksgiving break)?

We moved to the west coast and usually do Hawaii. These are my thoughts on the ones we have done:
1-Costa Rica - pure heaven.
2-Grand Cayman - highly overrated.
3-Cancun - trashy but loved the water.
4-Jamaica - amazing beaches.
5-Puerto Rico - meh. Bioluminescence was amazing.

We love beaches but not for the entire trip. Would love a chance to explore a bit too. Two couples, 4 kids (2, 6, 6, 11).

Also, going back to Jamaica would be an option. Back to the scene of the crime where wife and I ate too much brownies. Dr gave me two shots to each butt cheek 😂.

Belize has the coast with resorts, but also has San Ignacio which is in the jungle. Food is A+.

Beautiful scuba diving on Lighthouse Reef if you do that.

Roatan (Honduras) has a gem in Anthony's Key Resort, but the rest is your typical cruise port.

Grand Cayman has a place that lets you swim (literally, not just walking in the water) with horses. It's a unique experience as far as I can tell.

Try any of the ABC Islands ( Aruba, Bonnaire, Curacao). None of them are in the hurricane belt.

Coronado beach area in Panama. There are beaches, mountains, and nature reserves.

Planning a trip to Rome and Naples with day trips to Tivoli and Pompeii. Is 1 week enough? I feel like reading through 3/4 day Rome and 2 day Naples itineraries, the trip seems rushed. I have unlimited PTO but my SO is limited in time (but luckily he can work extra hrs and then use less PTO). I would say max we could do is 1.5 weeks but adding on 3-5 more days seems almost too much? Thoughts? For reference, I did Venice-Florence-Rome in a week and it seemed okay but it also wasn’t as planned out
