I mix desmos and paper /pencil stuff all the time. I think it's very important, especially for math, that kids get to work with paper and pencil since showing their work in higher level mathematics is still easiest in pencil/paper form.
I try to think about the main learning goal when deciding how to deliver a lesson. If I want them to learn concepts, like understanding what finding solutions of Quadratics mean, I may use desmos more. If I want them to learn how to do specific skills, solving Quadratics via completing the square, I'll probably lean more towards paper/pencil.
Definitely use both! I use Desmos a lot but also have the students do graphing etc on a paper/pencil test as well.
