Honestly I try to make dinner at night and take leftovers for lunch the next day so its already made and I don't even have to think about what I am going to eat or bring.
I like to make a soup/stew or stir fry, basically just use up whatever random stuff we have in the fridge. Still can take a bit of time, but a good way to use up stuff. Also sometimes we get packaged frozen meals, I know, a fate worse than death for some, yet so easy and nice to not have to think for dinner.
Frozen lasagnas and pizza are lifesavers some weeks. Yes, not ideal all the time but anyone in my house can make them and get a meal when they need one.
Stir fry and enchiladas are my go-to meals to clean out the fridge.
If I want to throw together a fast but nice dinner I'll pick up a pork tenderloin and roast it in the oven. It only takes 35 minutes at 400 degrees, and it comes out great. If you're ambitious and the weather is nice, you can also cook it on a charcoal grill. The best part is you get a nice hot meal out of it, and the leftovers make great sandwiches.
I do a lot of one pan meals when I'm busy, basically anything I can prep easily and throw in the oven. Lately that's been a few variations on a Mediterranean dish. Toss feta, red onion, cherry tomatoes, and broccolini in olive oil, salt, pepper, chili flake and lemon juice. Put it in the oven for 30 minutes and serve over couscous or orzo.
I cook a bunch during the weekend. I like doing it but I understand not everyone does and it feels like a chore on the weekends.
