In person sellers are almost always more expensive than bulk, online sellers like James Allen. You'll get more for your money searching online.
As far as diamond parameters go, don't go SI2 at all. Bare minimum SI1 or preferably VS2 because there will always be that one friend or family member who can see inclusions and throw just enough shade to take away from the experience down the line. At the very least, consider buying something good enough that it will never need replacement. No big deal between G and H. If you get white gold or a platinum band, don't go below H. If your gf truly wants dainty and has small fingers, then 1.2ct is more than enough.

Agreed. Ask her close friends and sisters (if she has them AND they get along/are close). I'd pass on asking mom or older relatives who have different tastes and may think they know her style but don't really.
Honestly, SI2 is not worth it vs VS2 or SI1, and probably won’t notice a difference in color much between and H and G. Have you seen the stones in person? Bigger stone pretty much always wins, when already near the best for color/clarity.

Color is less important if you're going with gold over plat/white gold.
With an SI2 at that size she will probably be able to see a lot of imperfections, use the money to go to SI1 with the best cut possible, back into color from there based on cost IMO

1.2 ct is plenty big enough if she likes dainty and has small hands. As others have said, prioritize cut and clarity over color, and definitely look at the diamonds in a store if you haven’t already. I personally couldn’t tell the difference in color ratings and didn’t care, but cut and clarity were apparent.

If you’re doing yellow gold, G vs H won’t look that different. Your jeweler should let you drop them in a setting to compare. White gold or platinum, I’d go up to F
Also, if she’s looking for something more subtle, go with the 1.2. Oval diamonds look bigger than equivalent carat round diamonds because they are shallower cuts and you can see more surface area (full disclosure, I did buy a 2.1 round for my wife even though she didn’t ask for something blingy 😂).
If upgrading anything, I’d go up in clarity to VS2.
