Why not just turn on roaming with your carrier? It’s not cheap exactly but it is less painful. As for planning, if you are heading to major tourist stops then buy tickets in advance - with a “fast pass” option where possible. Lines in Venice and Florence can be awful.

Airalo. I use it everywhere globally. If you are going to popular tourist spots in Rome etc book tickets or guided tours in advance

Only caveat is your phone is unlocked, can’t be carrier tied. Can also provide a referral code for a few dollars off
If you have Verizon, they have some international options. Idk what you mean by forms but definitely get tour guides for big touristy places. Not because the info is all that valuable but because you skip lines. Also, don’t go to TikTok restaurants. Often super long waits and not that great anyway. If it’s your first time, I’d recommend flying into Rome and renting a car, and skip across some major cities on the way to Venice and fly out of there

Get an international drivers license from AAA which is super easy.
Make a SERIOUS effort to learn some Italian. I did that for six months and was a kind of beginner/intermediate. It was a game changer in the smaller towns, and people in bigger cities really appreciate that too.
Don’t physically look like a tourist - at least in an obvious way. Stay classic neutral - it matters.
Get OUT if the cities, especially for food. City centers in the bigger cities is kind of an icky Disney version for the f****** cruise ship crowd that you should avoid at all costs.
Family went to Italy last year. Verizon has a very cheap(relatively) international roaming plan. $12 a day or $100 for a month.
Second the international drivers license.
Also learns some of the city maps ahead of time if you’re driving. A lot of them have restricted driving areas not super well marked and you get a nice fine if you go through…super straight forward when some parking garages require you to drive in them to get to.
