What stage of design are you in? Would A/B testing help or jump to multivariate? Have you had anyone else click through the flow as a prototype?
The site is already live so this is more about improving the signup process.
Usability testing is the best way, you can do during moderated interviews and the live site or with the prototype (if you use useberry you can do it non-modedared) to corroborate I'd pay attention to what the user does first and if they seem confused or annoyed at any point and that could show you if the UI is complicated or if there are too many steps (testing is time. consuming but if you can do it is the best option to corroborate with real end-users)
