After Appraisal, company haven't shared updated offer letter (with new salary), it's been 2+ months now.
If I start searching for new job, will that HR ask about recent offer letter? Or only salary slips are enough?

Companies do market analysis for a position before an offer is made. Your company willingly grossly underpaid you knowing the market rate. That speaks volumes about the company character and values. I would start looking elsewhere. You can use the new offer to bring your salary up to market or as your next new adventure.
Look else where for comparable pay and get an offer and leverage it to where you want your pay to be. unfortunately companies respond only to when they feel they will lose you.
Thanks! However, I just accepted the offer about a month ago. I don’t want to jump ship already lol. I thought about going hard for 6 months to prove myself and then have the conversation about next level pay. Thoughts?
Look for other opportunities to negotiate. If you cannot find one, you are obligated to continue with the salary you agreed on. "You are a slave if you cannot negotiate"
This is what I would suggest as well. It really helps to get another offer in hand.
Do your best but don’t fool yourself. Companies often low ball and when you come to them for a raise or with another offer - sometimes they match, sometimes they do nothing. Its how the game is played!!!
Its all part of the learning that goes along with the corporate world.
Be ready to leave for more $, benefits, experience, etc. Unless you really like your existing role for whatever reason.
