You just need 3 simple conditional formatting rules. Click new rule and then use "Format only cells that contain" rule 3 times. First rule will be to fill cell with red for values between 0 and 50, then a second rule for yellow for values between 51 and 75 and the final one for green for values between 75 and 100.

Looks like what you’re doing is setting a % gradient. I’d let that go and just do a color fill conditional format.
Update: because I was using percents - the conditional formats had to be .##, not just ##. That was the major issue I was facing
