The big faves are a lasagna, veggie pizza (kind made on crescent roll dough with cream cheese/ranch dressing mix), a tortellini pasta salad with fresh mozzarella, or crockpot olive garden chicken pasta. What I bring depends on if I can drive it in while warm, or slow cook it at work, or want to make the night before.
I'm not much of a chef but I can make killer salads! Last year I brought in a chicken salad and a southwest salad and they were both gone very quickly! I tried a turkey once and.... let's just say I'll stick with one of those ready-made hams haha.
We gave up on the potlucks once the office got too big, but now the office staff do a cookie exchange. Everyone has to bring 3-4 dozen cookies and then you can go around and select a variety of cookies to freeze and pull out for those busy days when you need to bring something to a get together (or kids event) and don’t have time to bake. Only rule is it can’t be a packaged cookie, homemade or bakery-bought only. Everyone loves my chocolate shot cookies (almond-flavored shortbread dough with edges rolled in chocolate sprinkles)! Easy to make and freezes well. In a super rush, you can buy the premade sugar cookie dough logs, roll those in chocolate sprinkles, slice and bake. Takes less than 5 mins to get on the cookie sheet.

I usually bring a beautiful cheese plate and add crackers, dried & fresh fruit, olives, candied and spiced nuts, quince paste, and honeycomb. It’s always a hit. If a couple people join in, you can go wild in the cheese shop & get some interesting new cheeses to try.
Great question! I haven’t been able to adjust to the idea of potlucks again after the last 4 years or so. I hope everyone has a nice time!
