They are drastically different cities. Spend some time in both to figure out which you like. Personally, I prefer Houston over Dallas. In my experience, Dallas has more of a closed, small townish “you aren’t from here” attitude that Houston doesn’t - probably due to the tons of diversity and transplants.
I’ve lived in both for my entire post -undergrad life (7 years in Houston and 8 years in Dallas). They are not “drastically different” from the perspective of a non-Texan. They are both large metropolitan areas with booming economies. Dallas is on the margin cleaner and more upscale. Houston on the margin has better food, more diverse, and the people are more down to earth. They are both great places to live.

Agree you need to spend time in both. I love Houston because it feels young and vibrant and there's so much to do. Friends recently moved to Fort Worth and it also is really fun but significantly more conservative than Houston.
Making friends as an adult is hard so it's probably also worth figuring out now what kind of activities you're planning to do once you get to Texas and which city can better support your interests outside of work.
I live in Dallas and never wanted to. Dallas is lame. All my friends in Houston love it.
Dallas has a much more robust real estate industry. Houston RE market is much thin due to the energy industry getting a bunch of the business talent.
I’m from Houston but moved to Dallas to be a real estate attorney. Not saying there aren’t great real estate companies in Houston. But you can’t throw a rock in Dallas and not hit a real estate developer or equity shop with a national footprint.
