What's the rest of the scope of your responsibilities? IT contracts are fairly straightforward. Ask to see your company's playbook or some precedent contracts. You usually run into the same issues across deals (limit on liability, indemnification, etc.)

There's several CIPP-related sources that you could take a look at that would give you a baseline introduction to US federal/state privacy laws and GDPR. But frankly, most IT contracts are standard and don't really contain "true" data privacy work beyond the terms I referenced. It's mainly just arguing over liability caps and indemnification for data breach, which is more commercial in nature.
For energy companies, makes sense that this is low priority. I assume you guys aren't really in the business of amassing and selling personal data. This also makes me question how helpful knowing privacy laws would be for you. There's HIPAA, FERPA, and some fintech privacy laws, all of which probably wouldn't be useful for you. The other big area is adtech/online advertising and marketing - reading on the CPRA would be helpful, but it's not mind blowing stuff. Basically just being transparent with disclosures and making sure you have consent to collect information. And this would largely hinge on the vendor's compliance with law, so there's not much technical drafting in the contracts themselves.
