I'm currently employed but exploring opportunities through LinkedIn. So far, three different recruiters have reached out, and I've committed to working with two of them already. Is this ethical? I keep thinking about real estate - you wouldn't use multiple agents - but recruiting feels different since they don't all represent the same companies. What's the right approach here?

I mean, they aren't only working with you, right? And recruiters can often be unreliable. I think it's totally fine to work with several until you find the job you want.

When I'm looking for a job I contact as many recruiters as I can find. If I like a recruiter for whatever reason, I'll contact them first.

The only downside.of this is that multiple recruiters are often recruiting for the same positions, so you'll probably have a lot of overlap.
