You can do it - I did a 2 week trip to Hawaii with my wife on pts and $778 out of pocket. Took 4-6 credit card signups and 18 months of planning, but was one of the best trips we’ve been on - would have been close to $14k out of pocket otherwise.
Booked a full trip to Japan for 3 weeks and a week in Hawaii on mostly points so far (about $2k out of pocket)

Not sure what you mean by blackout date and fine print. For award trips, you’ll need to be flexible on dates, routing, and when you book. Some of the best products open availability days before, or 330 days out.
I personally love the thrill of award booking, it makes taking the trip that much sweeter. But if you’ve got a lot/stress on you mind, sure use them next time.
Also I’m sorry you went for skypessos.
I just prioritized flights first and then worked everything else out where possible.
Basically bought biz class one ways to/from Europe with points and then filled out the itinerary to start where we landed and depart where we flew out of. For hotel points, I looked for the best deals but didn't waste them unless it was worth it.
For example, we flew into Paris and used Marriott points there, then spent time in Italy but used cash, and then flew home from Ireland and stayed at another Marriott.
Can you be flexible with your honeymoon dates and go a few days or weeks after the wedding? If so, you should be able to find better options.
Would recommend signing up for the pro version of Seats.Aero to see where you can fly via Airline transfer partners based on your dates of travel and credit card partner. Similar to what someone else mentioned. Find the best points/miles fares on Biz class to Europe, Asia, South America, etc and fill in the details from there.

you might want to pay a points service to help you through the process to maximize your value. don't get your hopes up with Delta points, but with some flexibility (dates and location), you might be able to find some value.
Or vice versa.. transfer Chase or Amex to KLM/Air France to book either AF/KLM or Delta operated flights from a major city. And use DL skypesos to book roundtrip tickets to a major hub, such as JFK. Or use those DL Skymiles for intra-Asia flights. Did Korean Air biz class HND-ICN for 15k miles.
