I'm looking to find a job like the Forward Deployed Engineer role Palantir Technologies in the UK.
I have become hooked on finding a job that involves solving the kinds of problems they presented during their interviews. Although I got to the final round my performance anxiety got the better of me (I think I wanted the job a bit too much...). I will reapply after working in a similar company.
Is it "deep tech" / "data science" or "smart enterprise" that they're doing? Any advice welcome.

You're interviewing so what do you think they'll do if they find out? It's not like they'll fire you - more likely they'll try harder to keep you. No downside. Take a few hours off for you.
Everyone does it, it's fine
Phone is terribly awkward. Show up in person or don't show up at all.
Since it's just an info interview theres the risk of an actual interview not materializing. I think in person creates a stronger impression, but sometimes it feels like they want phone cuz they're really busy...
