There are definitely internships out there for licensed attorneys. I have worked at firms that offered them in the past. I would try networking and asking around; surely someone's firm is offering an internship you could apply for.

Have you been doing litigation while in public interest law? I have seen public interest attorneys with litigation backgrounds be hired on as laterals in BigLaw litigation, including from Legal Aid direct services and impact litigation.
Your court skills will be a great selling point.

Try networking and showcase your skills that could be transferred to big law work. Just applying might not be helpful as you are competing with people who have direct related experiences.
