Yes, it's a good thing you already had one experience! You need to know how to highlight all the essential parts effectively. When I first started, I made sure to highlight the challenges and how I overcame them, as well as my goals (both set and accomplished). It helps to paint a picture of your professional profile.
I think it's fine, as long as you show a diverse range of skills within that portfolio. You could also draw on school projects or even your own personal projects as well.
If you can highlight different projects that can help with the variety part. You can definitely use personal or school projects in your portfolio, too. You’ll be amazed at how fast you add to it, and soon you’ll have to figure out what to cut instead of what to include.

It great to have actual experience to show and it’s fine to show some school and personal work. My first copywriter portfolio had excerpts of a screenplay. A CD who hired me liked my dialogue.
