What jobs are currently paying 85k?
Im not searching for a new job but an acquaintance reached out about a similar role at a similar energy company.Turns out 2 ppl threw my name in the hat. I looked into it and the position was posted 2 weeks ago.Their director wants to meet.I bet pay is one of the first things to be discussed so that no one’s time is wasted.Am I crazy for not wanting to entertain it for less than 20-25% base pay increase? Is it selfish to ask for more? I’m sure most salary conversations end in negotiation anyways?

Just going by what you've said, and knowing nothing about the two employers, I'd say you're better off working in the established company. Working for a new entity can be exciting and it can work out very well for someone, but it's always a gamble. With an established organization at least you know what to expect and working within their system will likely teach you a lot.
In this job market, I would choose the full-time role over the part-time one. It doesn’t sound like the part-time position would include benefits anyway, which I’m sure is also a concern.
