Can I have your job
Is the change in internal priorities likely to change soon? Or is there an end in sight? I’d ask if you can either have other things to do if you have bandwidth or if you can trade a little with someone else to do something else every once in a while…
I dont understand; what are you doing? Do you not have form NDA you hand out? Or if vetting paper from others, have you not yet defined what’s the scope of fine vs things that require escalation? It just seems like there can’t be that much work to do if it truly is just basic NDAs.

If you’re getting paid well, I’d say just keep at it for another 6-12 months. If that’s still all you’re doing, then you can start looking to move to another in-house job. By then, you’ll have some in-house expertise to discuss at interviews, even if it’s all NDA work.
