Highlands (more hipster, trendier), Wash Park (more relaxed, a bit more dense), Platt Park (super cute, farther away, more suburbs, more expensive), Cap Hill (more urban, diverse)
Ok. My knowledge is pretty out of date and my experience is pretty much the opposite of yours, so take any of my input with a huge grain of salt! RiNo is relatively newly gentrified and from what I have seen of it, hits at least some of your needs.
Highland would as well and is more of a green neighborhood feel whereas RiNo is more downtown/urban.
The neighborhoods around South Broadway or South Pearl St. might also work.
Wash Park has a one-block high street with some shops and restaurants. I love
The neighborhood but I can’t afford it anymore.
I've lived in CO my entire life. I'd checkout Boulder before anything Denver has to offer.
SC, no offense intended by any means, but I am so curious where you got that impression. I am biased from having lived here a long time so wonder how people create mental images of a place.
What attributes are most important to you? Do you have or are you planning to have kids such that you’re interested in schools? Proximity to mountains? Craft beer? Walkable restaurant scene? Cost?
High priorities: 1) walkable food scene/proximity to shops, groceries, and parks 2) craft beer 3) access to mountains. I have to kids and no plans for them but I do have a dog

Parker is nice in it way but for OP? Debatable food scene to put it mildly, and about as far as you can get from the mountains in the Denver metro area.
