I've been using AI for all the stuff I hate doing, namely pairing fonts and coming up with complementary color schemes. I'll give it some vague info to work with, describe the style I'm going for, and have it mock up 3-5 options, depending on the project. Once I select a winner, I'll get to work on filling in the rest. This stupid setup stuff used to take me way too long, so it's been a huge time save for me. As far as non-AI tools go, Coolors is great at the color scheme piece as well. Such a well-designed tool (and website!).
Identity system in general. I do a bit of this at work, but the majority of it is for smaller freelance clients who don't have any kind of brand kit beyond a logo. Their content and branding is all over the place, and I get brought on to clean it up (among other things). Sometimes I know the exact direction I want to go in, other times I sit staring at a blank screen with no clue how to get started. When that happens, having AI throw together a few concepts for me to visualize is super helpful.
I would actually love to know this as well. I hear so many people saying they are utilizing AI these days but I don't know how to use it to make a difference for me. Would love suggestions that anyone has.
