Did this last year. Show your previous year's tax return (even if you weren't freelance then) along with current bank statements and recent paychecks. Also offer to show anything else they'd like to see to prove it. If you're in NYC I'm sure landlords have seen every variation of freelancer/self-employed tenants so it's not uncommon. They just don't want a broke person so just work with them.
Show tax return and/or I’ve asked the companies I’ve freelanced with to write letters stating how much they’ve paid me in a certain year.
This isn’t ideal because you have to pay a fee but a lot of people in NY use this service: https://www.insurent.com/renters/?gclid=EAIaIQobChMI1LbzreXU4AIVh5OzCh25DQpeEAAYASAAEgJVgfD_BwE

Buying a house while working freelance is even harder.
Bank statements and pay stubs. And if that doesn’t work, try to get a letter from your employer saying that you’re contracted under them for the next 6 months. If you can’t, ask a friend who owns a business to write you a letter saying that you’re employed with them for the next 8 months (the longer the better). Sadly it’s the only advice I can give you.
Tax returns and bank statements. Long term contracts if you have that
