This is all hearsay, but I’ve been told hours are better than biglaw, but I do not think there’s much WFH flexibility. Again, not at Winstead myself, so happy to be corrected if I’m wrong!

Hours less. Yes you can have a life. I suspect 3-4 days in the office. Very little fully remote in TX anymore.
My spouse left Winstead Dallas office in ‘21. Definitely doable to have a life based on bucket system hours/pay, but I believe they are largely RTO.
It depends on your practice group for wfh. Some groups are fully remote, some don’t allow it. Work life balance is pretty good at Winstead. Do a hard week about once a month otherwise normal lawyer hours 9-10 hour days.
How about weekends?

Short of a National big law firm, idk that much work from home flexibility exists in Texas at any of the middle market sized firms. Maybe in some isolated practice groups but not as a general rule in my experience.
We place folks at Winstead all the time. It varies by group. Looks like you might be counsel/partner level. I know there are some fully remote folks there, my classmate does a ton of WFH, and my neighbor is there and is largely WFH. So, I think there is flexibility. DM me if you’d like to chat.
