If I was the kid, I’d rather have a modern sub than a birth year. So my advice is to get on the list and take it whenever it becomes available. Hopefully you’ll have it for his college graduation or whenever you intend to make the gift.

Daily wear (only watch I own) is a Dornbluth 99.1 (42mm) if that helps. I’d considered a Speedmaster and think it’s a good fallback option.
Would I have a shot at any Rolex stainless in a year timeframe? I think it’s an itch that I want to scratch but don’t really want to go gray - if I’m handing it down 18 years from now it’d be cool to have my name or his on the papers (maybe that’s dumb).

Unless you have a relationship with an AD, or get super lucky, seems to be nearly impossible. But I like the idea!
Caveat I suppose is you can get almost anything you want if you pay for it!

Bought a moon watch variation (First Omega in Space) and while not limited, its unique in a way so that was a motivating factor. Can wear it until he’s “ready”...

Doable. You would need someone to introduce you to your local AD. I was referred to a dealer and got one in 3 months. Granted that was before the new model came out. You can always go grey and hopefully prices fall by then.
Other options: omega is a good option both speedmaster and seamaster have lots of good history
Speedmaster Moonwatch. History is arguably richer than a run of the mill Sub. And these days with the Rolex craze it’s certainly more special

You should be able to get either a NOS or gently used ALS Saxonia Thin. The piece below was 12k USD on Chrono24. As timeless as it can get :-)
You might even be able to negotiate a few % off with the AD for a new one.
Agree. The ALS is awesome, but probably a better present for 25th birthday or wedding etc
