5% is the norm. Last year it was 5% for medium rating
The variable pay is in form of discretionary performance linked bonus.
Yes, it is normal in big4 to not mention it on the offer letter or anywhere else as this is at the discretion of the firm at the end of the fiscal year.
However they do always payout bonus at the end of the year, unless you are rated at the bottom performance rating.
30% though is probably only for the rarest 1-2% cases who are rated at top. Usually 10-15% of your fixed income is a better benchmark.
Don’t worry about whether it is mentioned in offer letter or not. It is paid to everyone, except bottom raters (non-performers). HR is not tricking you by not mentioning it in offer letter.
Just don’t take their 30% claim at the face value as I mentioned earlier

How will have the proof of variable pay in this case
Proof of variable pay is - your increment letter which you will get after first appraisal once you join KPMG.
That's a solid proof. It mentions the bonus payout for this year is xx,xxx/Rs for rating 3.
Kpmg doesn’t mention it, same case with me HR mentioned
