Working for a startup is inherently risky. You might pour your heart and soul into something and have it all crash and burn around you. On the upside, it'll be an experience and you'll come away with some good stories. And, seriously, you may learn a lot. As for assessing risk, you have to be clear-eyed in looking at the business. A lot of startups are, to be honest, inane and won't become a real business. If you think something may evolve into a real thing, give it careful consideration.
