Use the weekend to prep where you can. Take the time to meal plan. Make enough for leftovers. Bet there are good ideas on Pinterest for this topic as well.
I make three large meals on Sunday night that can be rotated in throughout the week, taken for lunch etc. Also crockpot meals overnight that can be refrigerated before you leave for work and reheat quickly when you get home.
You guys rock. Thanks for inspiring me to get my shit together. When I do take the time to meal plan and prep what I can on Sunday, the week goes so much smoother. Lately I have been prioritizing other things on Sunday, but it’s not worth it in the long run.
Meal plan. Taco Tuesday. Pasta. Pizza Friday. Totally uninspired but cheaper and healthier than takeout all the time.

I’m in the burbs - luckily my husband cooks as it’s not my favorite but actually we mostly grill - even in the winter - easy and fast clean up and make enough for another day. Otherwise simple stuff like baking salmon with some seasonings and salad or rice. My picky toddler eats like 5 things unfortunately...we don’t go too crazy during the week save more complex recipes for the weekend. I’m not great at meal planning but I know many who do!
I really like making big batches of things like black bean burgers, soups, and pasta sauce and freezing them. Then it’s easy to defrost and make pasta or roast a veggie for a side. We also do rotisserie chicken at least every other week with some instant rice and steamed broccoli.
May I also recommend bullet journaling as a complement to meal planning and overall life/work organization? I've been doing it almost 2 years now and have never stuck with a type of planner this long. Also, maintaining my bullet journal is a moment of zen and actually makes all the planning more fun (for me). But like... Don't Pinterest or Insta it, there are some overzealous people who have too much time on their hands. Go to YouTube and watch the bullet journal video first, start there, and then move to Insta and Pinterest when you've got the hang of it.
Totally unsolicited advice here. I'm just a big advocate of the system, and it's made my life so much better. (Silly, but true)
I cook large quantities when I have time (typically weekends). Then eat what’s in the fridge for a week. I am typically not home in time for dinner. Nanny feeds the kids.
@BSD1 - funny you say that bc today is my 4 year anniversary (modern gift theme is appliances), and hubby literally just gave me an Instant Pot this morning! I’ll check out that site for sure.
I referred to my house as lord of the flies too and I’m on my first school year of PT care for the kids. Oh and I failed to remind myself prior of the 3-4 weeks between camp and school. HELP
My husband cooks for the family. Or I make a late dinner for us. Meal plans and weekend big cooks are also helpful.
20 minutes meals. bake salmon or chicken steam up some veggies and boil up some rice or throw potatoes in the oven. I average 3-4 fresh meals during the work week
I understand my family eats the following in rotation, especially when work gets busy: chili, boxed salad with cherry tomatoes on top and rotisserie chicken
Taco night, taco night, taco night. Pre-made frozen lasagna or meatballs.
Meal service. Get delivered on Tuesday and have meals through Saturday. Sous vide and take 6 minutes to cook. About 150/week.
One Spinach / feta omelete and potatoes in the oven night. One pasta night (make bolognese sauce on the wknd and freeze it). One fish and potatoes and veggies in the oven. Pizza on Fridays or Sat. Supermarket roasted chicken and some carb with veggies that could be basmati rice with frozen veggies. Another pasta night with creamy chicken spinach sauce. Another protein with curry potatoes / veggies in the oven again or take away. And I change the sauces and seasonings, plus some salad when I can. Cherry tomatoes and mini cucumbers for the kid too always help.
