A lot of this paperwork is to protect the clinic from lawsuits in case something happens. I’d ask your doctor about the actual risks that are relevant for your case. Multiples are a hypothetical possibility (the embryo could split) but are rare. There isn’t evidence that IVF causes cancer.
I believe I read that the cancer risk could be more tied to infertility in general - people with infertility are more likely to get certain forms of cancer just due to the conditions that cause infertility.
These are low probability events but still in the realm of possibilities that they and we have to acknowledge…just like the risks associated with birth.

Multiples - if you transfer one embryo it is very low that it would split but higher than natural pregnancy. If you transfer more than one a whole other story
Thank you- transferring one (frozen) when I did IUI I ended up with 2 (one didn’t make it) so trying to avoid that trauma all over again
I would say chances of multiples are low at your age. When did you freeze your eggs? Unless you’re frozen in your 20’s I would say the doctor should put in 3 or all. Try to relax, that is the best thing. Do some Accupuncture, (I used Maureen McLaughlin chicago based she was amazing) eat some healthy fruit/ protein foods before transfer and take some diazepam before and after to relax and drink lots of fluids. Make sure to do the progesterone shots for months after if you get pregnant. Good luck!
They don’t put more than one in if you freeze and do testing. All my embryos were PgTa tested, so protocol is just one.
