Now that you mention it, I haven't run into that in a while. But when it would happen with someone I'd be meeting with I'd instinctively fall back on creative hand signals. I'd put my hand up to interrupt, or point to my ears, lol. I guess it could come off as rude, but it's just a technical glitch that has to be dealt with, it can't be taken too seriously.
Run into tech issues a lot lately. Just last week, we were having connection issues already, so it was already kind of established. I just said Oh, sorry, you are breaking up. I’d rather be told asap so I can fix, or just so I don’t have to totally repeat myself, but never know how others feel.

It’s not being disrespectful to stop and let them know. It would be worse to allow them to continue and no one speaks up and the person goes unheard.
I never even thought about this being rude. As soon as I realize, I immediately interject with a quick" Oop! I'm not sure what is going on with our sound, but I can't hear you very clearly." Now I hope I haven't come off as rude in the past lol
I'll let them finish their comment if it's relatively short. But I won't let someone ramble unintelligibly for minutes at a time if their audio is terrible. There's nothing rude about it IMO. You're saving them time.
