Check what the market rate is for each and do some research into what the competitors are paying.
Also consider non monetary benefits, ppl work for me bc we’re small, flexible, require dependability and accountability but also rarely ever gripe about PTO requests or flexing hours when stuff comes up
Give clear expectations of what the role offers in pay and benefits, If you offer below what the candidate is asking but you see possible potential for growth give them clear expectations on routine meetings quarterly or bi annually or whatnot in order to assess readiness for next steps for responsibility and pay bump, lay very clear expectations on what to expect for opportunities for growth
It depends what the role is, their experience level, and skill set.
Mentor
What’s the actual job and industry? And what city is this in? And what are they asking for that you consider to be outrageous?
By the way, even in professional sports, they don’t pay for potential lol. You have to have a proven track record to get drafted.
Set up a test for them. If they know nothing , give them basic instruction see how they follow it. If they pick it up , step up the instruction to the next level and test them. If you think they are smart , pick it up quickly they are worth the higher pay, if the bomb they are not . Call it a working interview.
