SW doesn’t have economy comfort or business so almost always just do the wanna get away fare when available especially now when air travel is still lighter than normal. The key with Southwest is just to check in exactly 24 hours early so you can A or early B group boarding. 
The other two fares do let you do same-day changes(instead of paying flight difference) 
The business select advantage is it let’s you board early(wo having to check in 24 hours early) so can get closer seat

Same stuff, more you pay, the earlier you can board.
Business select automatically gets you in A1-15 boarding position. Business select and anytime are refundable vs getting a credit voucher (which expire after a year I think). They also have different point earning rate. Basically there is no reason to ever buy anytime (the middle one) because business select is normally only $35 more and you get the boarding position, more points, and 1 or 2 drink vouchers.
As someone who has regularly flown Southwest, just buy the cheapest one. If you don't want to risk getting a "bad seat" because you checked in late, pay the $15-20 early bird check in fee when you book. Or it's $40 to upgrade your boarding position at the gate.
If it matters to you I've been on 3 SW flights in the last two weeks and there were a combined zero empty seats (not blocking middle or taking any other noticeable precautions other than lecturing people for not putting their mask up while chewing).
The nice thing about SW is they have free checked bags so you don't have everyone trying to stuff a big roller bag into the overhead compartment and there is usually extra space even if you are the last one on the plane.
My employer offers 90 day A status from the benefits page. Check to see if yours offers anything similar.

Business Select and Anytime are fully refundable: cancel and you'll get your money back. Business Select also comes with priority boarding (first 15 out of 140 or 180 ish) and a couple of drink coupons.
99% of the time, Wanna Get Away is the answer. Cancellations will turn into flight credit that you have to use within one year of your original booking date, and to get the best boarding position you'll have to play the 24 hour check in game or pay for Early Bird boarding, but the savings over full fare economy are worth it.
