Those who were at consulting and transferred from EMEA or APAC to Canada? How was your experience?

Per SHRM, I was just curious if any HR Professionals completely removed the following fields: social security number, recommend salary, graduation dates, military discharge info, race, maiden name like (Ms. Mrs. Ms), & criminal history questions. Would my best bet be to take an offer with a big tech company that has offices in Canada, then transfer when the time comes?
