Rescinding before you start is not the worst thing, do what's best for you.

Contact the first company and say you have an outstanding offer which you need to respond to this week and would appreciate if they can let you know in the next few days. Then tell the company that gave an offer you need a week (but don’t say you are waiting for a different company or they may go with someone else). Hopefully the one you liked will speed up their decision. If they really liked you and want to give the offer, this should help move the process along if they know you have other options/deadlines.

I don't have any specific knowledge on what is acceptable these days, but I suspect it probably isn't more than a week. Your timing sounds like it may not work out. I think if you rescind the acceptance before you actually start you're probably not going to piss them off toooo much as people get that you are probably looking at more than one role if you're interviewing.
The traditional time to give an answer about an office was usually within two business days. That seemed to give people time to consider everything and sleep on it. If you need more time you could ask for it and they may accommodate you. I'd be wary of accepting and then going back on an offer. That's the kind of thing that would make you look bad, and depending on your circumstances and location, people may talk about it.
