🤣. I love french cooking and agree with you. I make beef bourguignon or coque au vin with zucchini instead of mushrooms. they taste like dirt.
I don’t like most French cooking.
I like some French cooking, it just depends.
I would rather use Better than Bullion than make my own stock. Homemade stock is overrated.
From a flavor perspective, maybe (depends what you're making it with IMO... mine is kickass, but I also raise almost all my own meat).... but from a nutritional standpoint, a homemade bone broth or stock is leaps and bounds better. And you can also add some store bought if you think it improves the flavor, and not lose the nutritional benefits.
I like my burger dry…
I do like a pink juicy burger. However I do have a kink for dry well done burger. In my opinion the ground meat that forms the patty already lost its structural integrity, and therefore a bit of chew would hurt me much.
When I make burgers for myself only, I grind a mixture of chuck round and scrap short rib (unattractive bits of short rib that they trimmed out, crazy cheap at my local H mart) and onions also grinder in to tenderize the monstrosity. Then I do a loose party, pat them down in the pan like a smash burger and let them cook till well done. I sometimes pair with gravy like a loco moco or just with salt and pepper.
That actually sounds really delicious to me. I also prefer a well-done burger with slightly crispy edges
I hate seafood. I will eat fish such as grouper, red snapper, cod, and halibut.
I'm not a fan of most seafood either, I don't get why everyone loves crab and lobster so much.
I hate any beef cooked less than medium. Texture and color bother me. Idk how it became “manly” to eat rare.
Truffles are gross and I feel like emperor’s new clothes when I point out they are gross. The fact they allegedly smell like pig vagina just makes it that much worse but I hated them before I learned that.
Oh and mustard makes any fish dish better and ketchup on steak isn’t my go to but it’s way better than people give credit.
I don't care for raw meat either and I hadn't heard about truffles but I bet I never forget it.
TBH I'm not a big fan of mushrooms either, nobody has ever flipped out at me over it :P
I think the thing that causes me the most trouble is arugula. I can't order mixed greens because half the time there's arugula in it. Some arugula is so bitter to me that I can't even eat anything it came into contact with. I have sent stuff back to the kitchen when I ordered a thing specifying "no arugula", and they made it wrong and then took it off in the kitchen, and I could tell when it got to the table. My partner has tried a piece of the same leaf that I found inedibly bitter and said it wasn't bitter at all. But people are definitely like "whaaaat? How can you not like arugula‽" when I mention it 😛
I'm fine with cilantro! In really large quantities it sometimes tastes a little soapy, but I've never not enjoyed a dish because of it. But I would guess it is something along the same lines. (I know I can taste at least one of the taste tests that's known to be genetic.)
The other weird taste I have is with raw tomatoes. I get this almost sewage-like note from them, it varies strongly with the variety, and I have encountered one or two that seemed to lack it, but most have it too strongly for me to enjoy. Whatever it is, it goes away when the tomato is heated hot enough, and I love cooked tomatoes (even if cooled back down).
I don’t think homemade pasta is better than store bought boxed stuff

most cheese is a cheap trick and highly overrated
dishes that have a motherload of fats require low skill to make them taste good. any monkey can add a stick of butter to mashed potatoes and itd taste good
The easiest way to make delicious food is to start with delicious ingredients, and it's hard to beat butter for a delicious ingredient!
(Also the hard part of mashed potatoes is the texture, moreso than the flavor.)

I feel the same about mushrooms but like the extracted mushroom "flavor" when you stew it out.
I think supertasters get the rough end of the stick most of the time, but another one of mine is I will.not. eat. organ meats. I am blessed to be living in a period of time when I can choose something different and I fully exploit that luxury.
