Love my Shun knives.
You’ll want a chef’s knife (or utility knife, if you prefer) and paring knife, at minimum. Serrated and bread knives are good additions after that. A cheese knife or wire cheese slicer is good after that, if you like cheese.
Also big diff between German and Japanese knives - I personally don’t like shun / global et al bc they feel too light / unbalanced, but I have a giant Japanese hand made chef’s knife that I love - but it’s for a different style of prep than European knives. Do try stuff, too. Remember that a good whetstone (not those dumb knife sharpeners, an actual whetstone - king 1k/6k is a great one) - makes all the difference - a sharp $40 knife is way better than a dull $400 knife
+1 on shun, have a Damascus chef’s knife beauty that has a few scars as I learn my whetstone.
