We Were Soldiers was fantastic until the end. They left out the most part of what happened to the sister business and replaced it with a cheesy bayonet charge along with a deus ex machina attack chopper.

Probably the best/most accurate would be Band of Brothers, though Tropic Thunder does a surprisingly effective job at depicting the absurdity.
Hurt Locker is almost certainly the worst, except for the cereal aisle scene.

Second Tropic Thunder as an accurate depiction of training. People running around the woods, everyone very confused but some people more into it than others. Gave me flashbacks.

Stripes was the most accurate portrayal of Basic Training I've ever seen, until Drill Sergeant Hulka is blown up. The characters' archetypes were written perfectly.
Saving Private Ryan is too genuine for me, and hat makes me not want to watch it again.
