Why does being good at your job just get you more work? I keep getting assigned extra studies because I am reliable. Pay and title have not changed. How do you stop being rewarded with more responsibility only?

I have been approached by 3 separate HR people at a startup company to interview for a position. I already have a fulltime job that pays well and I only started 6 months ago too. Anyways, the pay was intriguing and the job was a high level scientific advisor so I did interviews. At the last interview, at the end I was told the job was for management but I prepared for a different kind of interview. I am waiting for an offer or rejection letter.
