I did my MBA focused in finance and strategy. However, the supply chain/operation courses I took as part of the curriculum were extremely interesting. I would recommend going the supply chain route as you are also able to take elective courses (opportunity to try the HR management classes).

What are your main concerns?
Is it more about companies recruiting you for certain types of roles or the actual content in the classes you may otherwise miss?
I’m concerned about content and which direction provide a more suitable outcome. I don’t want to manage people and I’d want a good career from it
Becoming an IC after MBA (long term, not immediate) may be challenging, I think HR specifically if you are looking from an ROI lens. My understanding is some of the better IC roles post MBA are product management, which supply chain would likely be better for.
Regardless, I would try to tie the concentration to what you are hoping for post B-School.
I went into my MBA with an emphasis in marketing, but I ended up doing a general concentration in the end because I liked the entrepreneurship classes a lot. Maybe see what classes you like better? Might help you make a career decision later.
