How do you manage your money?

I only bring in a little over $2,600 a month. After paying all my expenses, I get to put away $500 a month in savings but don’t have much wiggle room for anything else, including going out money.

Planning a trip to Rome and Naples with day trips to Tivoli and Pompeii. Is 1 week enough? I feel like reading through 3/4 day Rome and 2 day Naples itineraries, the trip seems rushed. I have unlimited PTO but my SO is limited in time (but luckily he can work extra hrs and then use less PTO). I would say max we could do is 1.5 weeks but adding on 3-5 more days seems almost too much? Thoughts? Is Tokyo doable as a solo traveler with zero knowledge of the language? Thinking of doing a group trip there but adding on a few days alone in Tokyo at the beginning. Anyone successfully use the $200 Amex hotel credit? The FHR and hotel collection redemptions are all pretty insane price wise. I’ve heard there are some good deals to be had in Vegas but looking for other options.
