Leave the 1 yr old with family and go alone
I wouldn't travel international until COVID restrictions have been removed. We are waiting to take our 3 year old and 8 year old twins back to Europe but quarantine laws make that a disaster.
I would recommend if you can do it in the summer going to PNW, Bend Oregon would be great, Seattle is amazing in the summer, but don't let it fool you its just the summer every other part of the year is rain and crap.
Also depending on your child and their temperament will determine what would work best. 1year olds are not going to remember the experience, but typically just a nice resort and a pool to splash in with a nice play area is enough for them.
Omni, and JW Marriott/Ritz Carlton typically have very nice kid programs and are kid accommodating. There is a big difference between going to a child friendly and child accommodating. You will want the later.
If you have parents/in laws that can take the child for a few hours. You may want to go to a resort that has a family pool and an adult only pool you can spend a few hours alone.

Wow awesome thanks for the advice. Actually would be good with staying in states too. Last summer we did Estes Park, and all the parks in Utah. Loved Zion! Bend sounds good too.
