I’ve been to Puerto Rico and Barbados. Considering USVI and Aruba - open to other ideas too!
We’d probably stay put most of the time at the hotel/resort, so we’d ideally have beachfront access.
aruba - hyatt regency or holiday inn. not all inclusives but across from the main strip of restaurants. as for drinking, we bought bottles of alcohol and mixed our own then filled insulated bottles & brought them to the beach
Curaçao Airbnb on the beach, rent a car, and cheap.

Marriott Stelaris in PR, get a room with a lanai. You can just sit there, get bar service, hit the pool or go to beach (on property). The pizza place across the street is awesome and has a great brunch. Planning this as getaway with my sis.
We spent our honeymoon at The Club Barbados and it was great. Planning to go back next year. It supposed to be 2020 but that got pushed/we ended up changing to another property on Antigua based on scheduling - St. James' Club, also nice and much larger. They're both all inclusive and run by the same company. Barbados is adults only (16+, I think) and St. James' has a section of the property that's adults only with private pools/bar if you book there, but families in other areas.
As far as the beach, Barbados has a very tiny beach that's totally under water when the tide is in, but all beaches are public beaches in the country so a quick walk up or down and you're set. Antigua has two beaches - ocean and bay - and the bay is much calmer, almost lake-like, but the ocean side can have a serious sargassum (thick, heavy seaweed that smells like sulfur) issue each morning. They clear it, but it washes in from Africa regularly. Both places have amazing pool complexes, so you've got options.
If you want to go in the water in February, definitely the Caribbean, IMO.

You may also want to look into all-inclusive and adult only.
My vote is Aruba! It’s an amazing island and the people are actually really happy you’re there. I wouldn’t do all inclusive only because there’s a lot of great restaurants that are super easy to get to and the island is very safe. There are a few fun adventures you could do but it’s perfect for a lay around on the beach vacation 🤙🏼
I co-sign on Aruba as well. It’s beautiful, easy to access and convenient for so many reasons. Recommend the Marriott Stellaris or the Ritz next door. Don’t do an all-inclusive as all the big resorts are on the same stretch of beach so you can pop into any.
Turks and Caicos is nice. Much closer than Aruba!
Fort Lauderdale can be calm and relaxing. I stayed at Conrad right on beach. Couple of other nice hotels on that line.
Live Aqua in Cancun, book through Costco! All inclusive, clean, food is good, adults only & not too expensive. My group of girlfriends go every year for a week’s beach vacation.
