For business/ consulting CVs, there isn’t a big difference between Europe and US. In some countries (e.g. France), candidates will include a headshot but this isn’t mandatory. I actually work in Belgium, so feel free to DM if you have any more questions.

In Germany a headshot is also very common. I believe it is no longer necessary to put in birthday and marital status, but it used to be a thing.
1 pagers resume are for freshers (up to ~5-8 YOE, in any case <10 YOE)
2 pagers resume are acceptable for experienced hires (I would say with ≈ 10 YOE).
Resume are not CV. It’s a common misconception and word misuse.
CV will emphasize research and academic works while resume do not.
Any post doc CV compared with a non post doc resume will make it appear clearly.
