I’d consult an eviction attorney in your state to understand how property transfer works in the event of eviction.
But my gut tells me that the bike is considered yours if it is parked on your property after an eviction and the tenant has vacated, so I think the scrap yard is a decent solution. You may even find a motorcycle focused scrap yard that will pay you to take it.
Put it on craigslist...if they come back for it say what motorcycle
